Salad made from berries and spinach
“This is my usual when berries are in season,” Olivia says. Combine baby spinach, sliced almonds, mixed berries. For a boost in omega-3s, toss some chia seeds and balsamic vinaigrette. She also says, “It’s a gut-friendly powerhouse.”
Salads Made with Quinoa and Chickpeas
The foundation for this salad is robust quinoa and chickpeas. Olivia tosses diced cucumbers, cherry tomatoes, and red onions then season it with olive oil, lemon juice, and a little of salt. In one dish, fibre and protein? Surely, kindly! Olivia gives a smile.
Salad Made with Zucchini Noodle
Olivia’s zucchini noodle salad is must-try for something light. Tossed in a basic vinaigrette are fresh basil, cherry tomatoes and spiralised zucchini. For more fibre, toss some hemp seeds. Summer in a bowl, Olivia says.
