Greek Salad with a Twist
A mainstay of the Mediterranean diet, the traditional Greek salad is Cut cucumbers, tomatoes, red onions, and olives; then toss them in a basic dressing including olive oil, lemon juice, salt, and oregano. For further creaminess, Juliette tosses a handful of broken feta cheese. “I usually serve this with whole-grain pita bread on the side,” she notes.
Baked Cod in Tomato Sauce
Mediterranean cooking mostly consists in seafood. Cooking cod fillets in a tomato sauce created from chopped tomatoes, garlic, onions, and a bit of olive oil is an easy approach to appreciate it. Arrange the sauce in a baking dish, top with cod, then bake it in the oven at 375°F for around 20 minutes. Juliette finds the fish to be becoming quite delicate. “Match it with some brown rice or roasted vegetables,” she advises.
Lentil & Veggie Stew
Mediterranean cuisine emphasizes beans and legumes because they provide protein and fiber. Her preferred stew calls for lentils, chopped tomatoes, carrots, celery, vegetable stock. Season with a bit rosemary and fresh basil. The end effect is a filling meal that feels cosy but stays light enough for every season.
Whole-Wheat Pasta with Olive Oil & Herbs
Try combining whole-wheat spaghetti with extra virgin olive oil, minced garlic, and dried Italian herbs if you prefer simplicity but still want pasta. Juliette comments, “I like to toss in cherry tomatoes and spinach.” Perfect finishing for the meal comes from Parmesan cheese.
Shakshuka for Dinner
Usually eaten for breakfast or brunch, Shakshuka is also rather delicious for dinner. Juliette enjoys it too. In a skillet, sauté bell peppers and onions; add crushed tomatoes and a bit of paprika; then, top with a few eggs cracked. Till the eggs suit your taste, cover the skillet. She winkingly continues, “Dip in with some crusty bread, and you’re set!”
