For a busy morning Sophie’s first choice is a classic: gluten-free overnight oats. She stirs oatmeal with almond milk, chia seeds, a few berries. “I have just to grab it since it’s ready when I wake up,” Sophie says. Naturally gluten-free and high in fiber to start the day are overnight oats.
Smoothy made from banana and nut butter A banana and almond butter smoothy is another favorite. Sophie tosses a banana with almond butter, some coconut milk, and a little honey. “It just takes a few minutes to make and is creamy, filling,” she says.
Vegetable Omelette with Toast Made Gluten-Free Sophie treats herself to a veggie-packed omelette on weekends accompanied by a slice of gluten-free toast. “This is my slow breakfast,” she says. Bell peppers, spinach, and a little cheese abound in the omelete. It gives Sophie lots of energy for the day and is both comforting and nutrient-dense.
With Sophie’s suggestions for a gluten-free breakfast, mornings are anything from dull. “I have come across so many choices I enjoy,” Sophie notes. “Going gluten-free does not mean you have to sacrifice taste!”
