Meal plans for Sophia center on basics including olive oil, fresh veggies, lean proteins, nutritious grains, and aromatic herbs. A Greek-style roasted chicken served with lemony couscous and a vivid tomato-cucumber salad is among her favorite recipes.
Sophia’s ratatouille is a luscious tomato sauce-simmered rainbow of bell peppers, eggplant, and zucchini. She advises “the secret is to let the veggies cook slowly to soak up all the flavors.”
Wednesday: Herbs and Garlic baked salmon
Baked salmon gives dinners mid-week a boost in protein. Present with quinoa and steamed asparagus, this is a light but filling meal. “My children enjoy the salmon’s crispy edges,” Sophia notes.
Friday: Flatbread from Margherita
Friday evenings are for fun! Fresh basil, luscious tomatoes, and mozzarella cheese finish Sophia’s flatbreads. Laughing, “It’s a pizza night, Mediterranean-style.”
Sophia exhorts others to customize the dishes to fit their tastes. The Mediterranean diet is beautiful in that it is flexible. Ingredients can always be swapped to fit your family’s pallet.
