Ruby starts her day with a chia seed pudding created with coconut milk topped with fresh strawberries and almonds sprinkled over. “It’s light but keeps me full until lunch.” She comments.

Ruby suggests gluten-free muffins made with almond flour and mashed bananas for people who crave traditional baked products. She comments, “They’re moist, naturally sweet, and ideal with a cup of tea.”

Ruby loves a gluten-free wrap loaded with grilled chicken, avocado, and spinach for lunch. She sometimes substitutes a lettuce cup for the wrap for variation. “It’s fresh, crunchy, and immensely satisfying,” she says.

Dinner in Ruby’s house usually consists of lean proteins and roasted veggies accompanied by gluten-free pasta or rice. Her usual meal is Salmon grilled over cauliflower rice and a side of asparagus presented on a bed of “It’s basic, healthy, and bursting with flavour,” she says.

Ruby says to avoid traps via advance planning. “I always pack nuts or gluten-free crackers when I’m on the go,” she explains. Still another vital habit is reading labels. Ruby warns, “Gluten hides in unexpected places, so stay vigilant.”
