Dinner starts for Lila with a warming bowl of butternut squash soup. “I create creaminess with coconut milk,” she says. It starts nicely when combined with a slice of crusty dairy-free bread.

Lila enjoys a dairy-free Mushroom Risotto for her main course. She says, “nutritional yeast gives it a cheesy flavour without the dairy.” She also likes pesto spaghetti free of dairy and substitutes cashew-based cheese instead of parmesan.

Lila usually makes a fresh spinach salad topped with sunflower seeds and cranberries or roasted Brussels sprouts drizzled with balsamic glaze. “It’s all about adding variation and nutrients,” she notes.
End on a Sweet Note
Dessert does not have to be off-table. Lila recommends avocado and cocoa powder dark chocolate mousse free of dairy products. She laughs, “you would never guess it’s healthy.”
Lila finds that living dairy-free is empowering rather than constrictive. “You will feel better than ever when you discover what suits your body,” she advises.
