Almond Flour Brownies: “These are a hit in my house,” Luna beams. Made with almond flour, cocoa powder, and a touch of monk fruit sweetener, these brownies are fudgy and satisfying. “My kids don’t even notice they’re healthier,” she laughs.
Coconut Cream Mousse: To make this delicious treat, Luna toss coconut cream, unsweetened cocoa powder with a little vanilla. “You wouldn’t guess it’s low-carb; it’s so rich,” she says. Fresh raspberries provide a taste explosion that tops it.
Lemon Chia Seed Pudding: Both delicious and simple is this dessert. Luna stirs almond milk, chia seeds, lemon zest, low-carb sweetener, then allows it sit overnight. “For hectic evenings when you want a quick treat, it’s ideal,” she says.
