Phoebe’s Vegan Snacks for Energy and Focus

“I need tasty quick bites that also help me power me through deadlines,” Phoebe says. Her preferred selections here are satisfying plant-based foods.

Roasted chickpeas are one of Phoebe’s favorite munchies. She roasts washed chickpeas until they are brown and crispy, throws them in olive oil, sprinkles some smoky paprika and garlic powder.

She points out that this is a protein-packed substitute for chips. She keeps them in an airtight container so they are always ready anytime she wants a crispy treat.

Bits of banana-almond butter are another favorite. Phoebe cuts a banana, slosers almond butter on every slice, and garnishes it with chia seeds. “It’s like a mini sandwich,” she says, “but without the bread.” Perfect for a consistent energy release, this snack offers good carbohydrates from the banana and good fats from the almond butter.

Phoebe makes tofu lettuce wraps when she yearns something more substantial. She sautés tofu with onions and peppers fast, then wraps the concoction in crisp lettuce leaves. She says, “It feels like a mini meal,” yet it’s fast enough for a snack. Extra kick comes from a little soy sauce or sriracha.

Phoebe enjoys date and coconut bars for a sweet pick-me-up. In a food processor, she combines pitted dates, shredded coconut, and a few walnuts until she gets a sticky dough.

She then refrigerated the mixture for one hour before chopping it into bars after pressing it onto a baking tray. She insists, “You would never guess these bars are healthy; they are really delicious.”

Phoebe also always carries trail mix in her bag. Her own is made from almonds, cashews, pumpkin seeds, and dried cranberries. She advises loading store-bought versions with extra sugar and salt, “so I like to control the ingredients.” When she’s on the road, a few of this homemade mix provide a rapid nutritious boost.
