Leah Clarke’s Vegan Dinner Plans for Weeknights

Leah Clarke changed her health and energy level by switching to a plant-based diet even though she was not raised vegan. She is now offering her top weeknight vegan dinner ideas to enable time-pressed people create wholesome and filling meals.

Spiralise fresh zucchini and combine with homemade vegan pesto prepared from basil, garlic, nutritional yeast, walnuts. Leah says to add cherry tomatoes for a luscious explosion.
