Main Course: Grilled Chicken with Steamed Vegetables
Simple but tasty grilled chicken breast seasoned with garlic and herbs makes Holly’s main course. She presents it beside cooked carrots and broccoli. ” Using fresh herbs adds so much flavor without the need for salt or unhealthy fats,” she says.
Side Dish: Quinoa Pilaf
On the side, Holly makes a quinoa pilaf with mushrooms, onions, and a sloshful of lemon juice. “Quinoa is a really great replacement for regular grains,” she says. “It’s high in fiber and aids in control of cholesterol levels.”
Dessert: Sourbet made from berries
Desserts for Holly are cool berry sorbet. Made with frozen mixed berries and a little agave syrup, this is a light and sensible way to finish the dinner. Holly says, “The kids love it; I love knowing it’s good for them.”
Holly’s low-cholesterol cooking style stresses basic, healthful foods that make every meal fun. “Healthy eating does not have to feel like a sacrifice,” she advises. “Finding recipes everyone enjoys is everything.”
