Nothing compares to a bowl of consoling soup as the winter chill settles in. Hannah Lane, a seasoned chef and mother of two avoiding dairy, has created a range of dishes with warmth and taste devoid of cream.
Soup Made with Roasted Butternut Squashes
Hannah beams, “This soup is like a hug in a bowl.” For smoothness, she roasts butternut squash with garlic and onions then combines it with vegetable broth and a little coconut milk. Add some nutmeg and you have a filling meal ideal for chilly evenings.
Soup made from spicy lentils and tomatoes
Hannah’s fiery lentils and tomato soup satisfy those who enjoy a little kick. This meal is tasty and hearty using red lentils, canned tomatoes, and a variety of spices including cumin and paprika. She laughs, “My kids call this the “red magic soup.”
Mushroom Soup (Without the Cream!) Creamy
Hannah says, “you don’t need dairy; mushrooms have such a wonderful, earthy taste.” For a velvety finish, sauté mushrooms with onions and garlic then mix them with almond milk and vegetable broth. For a dish of restaurant quality, top with parsley.
Not only for the lactose-intolerant, Hannah’s dairy-free soups are a great way to warm up and keep healthy this winter.
