Hannah particularly enjoys her Roasted Sweet Potato and Quinoa Salad for lunch. While quinoa supplies protein and vital amino acids, sweet potatoes are high in vitamin A, which boosts immune system activity. Using a dairy-free, creamy and nutrient-dense tahini sauce, she tosses the salad.
Another must for cold-weather is Hannah’s Vegan Cream of Mushroom Soup. She says, “I keep it dairy-free using coconut milk rather than cream.” Excellent sources of beta-glucans with immune-boosting effects are mushrooms.
