Tamsin Starr always loved the idea of the Mediterranean diet—olive oil drizzled over ripe tomatoes, warm chickpeas tossed with herbs, simple meals that feel both nourishing and indulgent. But when she looked at her grocery receipts, the cost often outweighed the appeal.

“I used to think it was a diet for people who shopped at fancy markets,” she admits. “I’d blow through $80 and still forget to buy something for dinner.”

The key wasn’t about giving things up, she discovered—it was about getting creative with less.

She started at her local market with a plan: skip the specialty items and focus on staples. A big bag of brown rice, a couple of cans of beans, some garlic and onions, a bunch of kale, lemons, and—if it was on sale—olive oil. She skipped expensive olives and artisan cheeses, opting instead for simple pantry ingredients with bold flavors.

“It turns out, you don’t need imported artichokes to eat like you’re on the coast of Greece,” she laughs.

She prepped simple meals using what she had—like lentil soup with lemon and herbs, sautéed greens over rice, and roasted chickpeas with paprika. For snacks, she kept cut-up cucumbers and hummus on hand.

“It wasn’t flashy,” Tamsin says. “But everything felt clean and satisfying.”

What surprised her most wasn’t the money saved, but the shift in how she approached food. Instead of relying on packaged goods or overthinking what was “authentic,” she just cooked with heart.

“Eating well doesn’t have to be expensive or complicated,” she says. “Sometimes it just takes a little trust in your own kitchen.”
