Seraphina Rhodes’ Low-Fat Dairy-Free Dinner Plan

Until her energy levels began to decline, Seraphina Rhodes never gave much consideration to the relationship between her meal selections and level of vitality.

She adds, “I would eat something creamy or heavy and by 8 p.m., I felt like I needed a nap instead of a walk.” She then made the decision to experiment with a low-fat, dairy-free meal plan that would be lighter on her body but still taste-buds pleasing.

Starting dairy-free meant sacrificing all of her comfort foods, so Seraphina immediately worried about that. She chuckles saying, “I love pasta, creamy soups, and anything baked with cheese.” She found a new universe of ingredients—cashew creams, blended cauliflower bases, and coconut yogurt sauces—that delivered richness without the heaviness as she investigated more plant-based dishes.

Her first true invention was a butternut squash soup made with blended white beans rather than cream. She notes, “It tasted fantastic and didn’t sit in my stomach like a rock.” From there, she experimented with lentil-based curries with rice—all dairy-free, all low in fat—stuck-fries over zucchini noodles, roasted veggies mixed in lemon and tahini.

The change for Seraphina was not about limitation. It was about discovering innovative means of nourishing her body and knowing what it really required. “Dinner used to be the end of my energy,” she notes. “Right now I enjoy it without regrets.”
