Determined to recreate that sense of comfort, she began experimenting in her kitchen. At first, it was messy. She over-blended cashews into gluey textures. She made tahini that tasted like chalk. But she kept going. “I had to learn how to build flavor in new ways,” she explains.
She discovered that depth didn’t come from dairy—it came from balance. A little acid to brighten, a touch of salt for punch, and something creamy to bring it all together. Her cashew cream with lemon and garlic replaced ranch on her salads. A mix of miso, mustard, and olive oil gave her grain bowls a savory lift. And her coconut curry sauce became a favorite even among her cheese-loving friends.
Elowen doesn’t claim her sauces are perfect substitutes. “They’re not imitations,” she says. “They’re just good—on their own terms.”
And that, she believes, is what keeps her dairy-free lifestyle sustainable. “I stopped trying to replicate the old,” she smiles. “And started creating something better for me.”
