Yelena Moss remembers the precise moment things started to shift. The change took time rather than occurring over night. Though “the beetroot pasta incident,” as they refer to it, still elicits chuckles, there were mistakes. Mark’s cholesterol had reduced noticeably four months ago. More crucially, though, their nights at the dinner table had started to be more deliberate.
“We eat slower now,” Yelena notes. We have more conversations. Food evolved from just fuel to a relationship.
Yelena still bases her meal plan today on heart-healthy foods, but she no longer considers it to be a diet. “It’s just how we eat these days,” she explains. And truthfully? The old method is not missed here.
