Kaia Rose never thought much about the Mediterranean diet beyond the sporadic Instagram recipe clip; she did not consider herself a financial guru. Kaia knew she had to change the way she cooked and ate, though, after she and her boyfriend moved into their first apartment—complete with student debts and a limited food budget.

While looking for reasonably priced dishes free of processed food, she came into the Mediterranean style of eating. Her attraction was simplicity rather than only the health advantages—reduced inflammation, better heart health, better digestion. She clarifies, “It wasn’t about costly ingredients.” “It was about fresh, whole food and allowing each one shine.”
She originally concerned about the cost of the ingredients—olive oil, almonds, salmon, fresh vegetables—but Kaia soon found she could adjust. She began shopping deliberately, concentrating on seasonal vegetables, canned sardines or tuna rather than expensive fresh seafood, and bulk purchases of cereals such brown rice and couscous. “We invented a game out of it,” she says. “How much colour could we fit on the plate without overspending?”
Their dinners became into little rituals: roasted eggplant and chickpea stew eaten over subdued music, lemony lentil salads topped with chopped herbs and warm bowls of tomato-garlic pasta mixed with sautéed spinach and olive oil. They seemed unique even though they were not ostentative. Kaia notes, “I realised I didn’t need to spend a lot to create something that felt intentional.”
Originally a financial need, what became a joyous way of life? Not only physically at the table but also emotionally, the food drew her and her boyfriend closer. Kaia beams, “We talk more now.” “We stay longer after dinner, and I believe the cuisine has some influence on this.”
More than just a diet, the Mediterranean approach enabled Kaia rediscover what food might be: sustenance, sure, but also connection, comfort, and creativity. Most significantly, it showed that a little imagination will help one realise that eating properly does not call for a premium budget.
