“I thought I would have to give up my favourite dishes when I first started,” Gabriella notes. “But I soon came to see that vegan cuisine can be even more creative and equally satisfying!!”

Gabriella says the secret is to stock up on basic plant-based foods and schedule meals ahead. A well-balanced vegan diet is built on whole grains, lentils, fresh vegetables, nuts, and plant-based proteins such tofu and tempeh.

Gabriella advises beginning the morning with something simple and energising, such a smoothie loaded with fruits, greens, and plant-based milk. While evening could call for soothing foods like a creamy coconut curry or a rich lentil stew, lunch might be a large grain bowl containing quinoa, beans, and roasted veggies.

Gabriella advises a slow approach for anyone reluctant about the change. She counsels starting with one vegan meal a day or even going plant-based couple days a week. “You just enjoy the journey; you are not perfect.”
