Often dinner in Catalina’s house consists in grilled chicken topped with zucchini noodles. “A terrific low-carb substitute for pasta are zoodles,” she says. She sauts spiralized zucchini in olive oil with garlic and cherry tomatoes, then tops it with grilled chicken seasoned with Italian herbs.

Dessert: Dark Chocolate Bark

For a sweet treat, Catalina creates dark chocolate bark. She melts dark chocolate, thinly covers a baking sheet with it, then dries fruit and chopped nuts on top. “It satisfies my sweet taste and free from guilt,” she explains.
